Don't ask me why I chose such a hot day to spend lots of time in the kitchen, lovingly putting together chicken pot pies. It seemed like a good idea, at the time. (The time being when I was making out menus earlier in the week, before our heat wave hit.)
I used prepared pie crusts to coat the large ramekins on the bottom and sides, baking them for a few minutes before adding the sauce. My sauce was easy - boiled, cut up pieces of seasoned chicken, cream of chicken soup plus water, diced potatoes, frozen peas, carrots, and seasonings. That mixture cooked on the stove-top before being dumped into the pie shells. Right before the potpies went into the oven, I added tops to each and then baked them until those tops were browned and I could see sauce bubbling through the slits cut in the dough.
Brian was out with friends, Tim ate all his, my dad pretty much licked the plate, and Martin ate most of his, proclaiming that the amount was more plentiful than he could down. I'd definitely repeat this recipe - except, next time, I'd try to wait until there was a chill in the air outside.
