Brian loves cuban paninis and Cindy just happened to have a recipe she got from the Cafe. I think it's actually something Kellis made up. When I read the ingredients I was a bit surprised that Brian would even eat one, much less consider it a favorite sandwich. Brian eat something featuring a dill pickle???? Initially, I surmised that my kid had figured out a way to have his Cuban minus the pickle but, no, he actually considered the pickle a crucial component of the overall yummyness of the sandwich.
I made Cubans for me and for Brian and then scaled back for Tim and Martin. Tim got the basic sandwich minus pickles and Martin got a panini-fied grilled cheese with ham. Everyone wound up satisfied, especially Brian. And, let's face it - in this final week before my baby boy goes far away to college, it's all about making him happy.
This makes me smile. And I don't even have to be sad I wasn't there, because we all know I wouldn't touch a ham sandwich!
